Pot Roast with Creamy Mash & Greens

Ingredients

  • 2.2 lbs beef chuck roast
  • 1 tbsp olive oil
  • Salt and freshly cracked black pepper
  • 1 yellow onion, roughly chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 packet Gravy Baby Brown Gravy
  • Water, according to package directions
  • 2.2 lbs potatoes, peeled and chopped
  • 4 tbsp (½ stick) butter
  • ½ cup milk
  • 7 oz green beans
  • 1 bunch broccolini

Method 

1.   Season the beef generously with salt and pepper. Heat the olive oil in a large ovenproof pot or Dutch oven and brown the beef on all sides.

2.   Add the onion, garlic, and beef broth. Cover and slow cook at 325°F for approximately 3 to 3 ½ hours, or until the beef is tender and pulls apart easily.

3.   Boil the potatoes in salted water until tender. Drain, then mash with the butter and milk until creamy. Season to taste.

4.   Steam the green beans and broccolini until just tender.

5.   Prepare the Gravy Baby Brown Gravy according to the package directions.

6.   Serve the pot roast over the creamy mash with the greens and generously spoon over the Brown Gravy.
