Crispy Parmesan Chicken Mash Bowl

Serves 4

Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup buttermilk
  • 1 ½ cups panko breadcrumbs
  •  ¼ cup finely grated Parmesan cheese
  • Salt and freshly cracked black pepper
  • Olive oil spray
  • 2.2 lbs potatoes, peeled and chopped
  • 4 tbsp (½ stick) butter
  • ½ cup milk
  •  7 oz green beans
  • 1 bunch broccolini
  • 1 packet Gravy Baby Herb Gravy
  • 1 cup water
  • 1 cup milk

Method

1.     Place the chicken thighs in the buttermilk and refrigerate for at least 30 minutes.

2.     Combine the panko breadcrumbs and Parmesan and season lightly with salt and pepper.

3.     Remove the chicken from the buttermilk and coat thoroughly in the breadcrumb mixture.

4.     Air fry at 375°F for approximately 16 to 20 minutes, turning halfway, until golden and cooked through. Alternatively, bake at 400°F.

5.     Meanwhile, boil the potatoes in salted water until tender. Drain and mash with the butter and milk until smooth. Season to taste.

6.     Steam the green beans and broccolini until just tender.

7.     Prepare the Gravy Baby Herb Gravy using 1 cup water and 1 cup milk according to the package directions.

8.     Divide the mash between bowls, add the greens and sliced crispy chicken, then generously spoon over the Herb Gravy.
